Hey there,
I’m on my way back to Copenhagen after a trip to the US, so this introductory note is going to be short. But I wanted to get you the next Mise, Bord’s recurring feature that looks at the stories behind some of the most exciting dishes in the city. This one is about the cauliflower pot roast on the menu at Iluka, and it is a tale of things going awry and annoying ingredients that force themselves on you even when you wish they wouldn’t.
Oh! One other thing. Remember Bord’s last piece on the hiring crisis, and how things had gotten so bad that some restaurants were offering signing bonuses to staff members who brought in new employees? Turns out, it could be worse. In Ireland, it seems, they’re offering bonuses to customers (thanks to @chefkav for the tip).
